Veggie Sausage Casserole

Preparation Time: 15 mins
Cooking Time: 40 mins
Serves 4

Ingredients

675g peeled and cubed potatoes
2tbsp vegetable oil
1 chopped medium onion
2 crushed garlic cloves
2tsp thyme
1 peeled and cubed cooking apple
450g sliced carrots
6 veggie sausages
275g chopped tinned tomatoes
1 vegetable stock cube, dissolved in 275ml boiling water
1tbsp tomato purée

Method

1. Put potatoes in a pan of water and boil for only 5 minutes. (They need to remain quite firm). Drain and put to one side.

2. Heat the oil in a large pan and fry onions for 2 minutes. Add garlic and thyme and fry for a further 2 minutes.

3. Add carrots, apple and sausages and fry gently.

4. Add tomatoes, stock and tomato purée. Bring to the boil and then simmer for 15 minutes.

5. Add potatoes and simmer gently for a further 10 minutes.
