Salsa side dish

Ingredients
225g chopped ripe tomatoes
2 finely chopped small onions
2 tbsp lemon juice
1 tbsp olive oil
a few drops Tabasco sauce to taste
handful finely chopped fresh coriander
salt and freshly ground black pepper to taste

Method

Stir all the prepared ingredients together in a large bowl and season to taste. If possible leave to stand for about 30 minutes at room temperature to allow the depth of flavour to fully develop.
