Pasta & Mixed Bean Salad

Preparation Time: 20 mins
Cooking Time: 10 mins
Serves 4

Ingredients

125g pasta shapes
420g tin mixed beans
½ red pepper chopped
1 finely chopped tomato
½ tbsp olive oil
Juice of ½ lemon
½ tbsp chopped, fresh thyme
½ tbsp French mustard (consider reducing or removing French mustard from the ingredients if meal is for very young children.)

Method

1. Cook pasta, plunge it into cold water and drain thoroughly

2. Mix together the lemon juice, thyme, mustard and olive oil In a small bowl

3. Drain and rinse the beans. Mix with the chopped tomato, red pepper and pasta

4. Pour the dressing over the top and serve
