Sizzling stir fry

Preparation Time: 10 mins
Cooking Time: 8 mins
Serves 2

Ingredients
15ml / 1 tbsp oil
2 garlic cloves crushed
2tbsp soy sauce (optional)
3cms root ginger chopped
1 deseeded and sliced red pepper
1 finely sliced onion
1 chopped floret of broccoli
1 grated carrot
Handful of cut mange tout and baby sweet corn
(Other vegetables and ingredients such as bean sprouts and water chestnuts can also be added!)

Method

1. Heat oil in pan on medium heat and gently fry the garlic and ginger for a minute.

2. Add all sliced vegetables and stir fry for approximately 5 minutes until the vegetables are cooked but still firm and crunchy.

3. Add soy sauce or other sauce options listed below.
Best served with rice or noodles.


Easy stir fry variations:
• Satay in a second! Add 1 tsp mild chilli powder, a squeeze of lime and a large dollop of peanut butter!
• Thai in no time! Stir in 200ml coconut milk, and 1 tsp of your favourite Thai curry paste.
• Sweet and sour! Add 1 tbsp of sugar, vinegar, orange juice and corn flour.

For a basic stir fry sauce:
2 tbsp water, 1 tbsp corn flour, 2tbsp soy sauce. Mix together and add to stir fry 30 seconds before the end of cooking time.

For a sweet and sour sauce:
3 tbsp white wine vinegar, 4 tbsp brown sugar, 1 tbsp tomato ketchup, 1tsp soy sauce, 2 tsp corn flour mixed with 4 tsp water. Mix together and serve with stir fry.
