Blackeye bean burgers

Preparation Time: 20 mins
Cooking Time: 20 mins
Makes 5 or 6 burgers

Ingredients

1 tin (410g) blackeye beans washed and drained
2 chopped small onions
3 crushed garlic cloves
4 tbsp oil
85g sage and onion stuffing prepared following instructions on packet
2 tbsps flour

Method

1. Gently fry the onions and garlic in 1 tbsp of oil until soft and remove from heat.

2. Mash together the beans and stuffing in a large bowl.

3. Add the onions and garlic and mix together.

4. Shape into burgers and roll in a little flour.

5. Leave to stand for 10 minutes, then fry in the remaining oil for about 10 minutes per side or bake at 200°C (Gas Mark 6) for 10 minutes.
